Macadamia nut fudge

Ingredients (8 servings):

  • 1 1/3 cups of cocoa butter, chopped
  • 1 cup coconut oil
  • 2 1/4 cups of whole macadamia nuts
  • 1 1/3 cups raw organic pastured butter
  • 4 to 8 drops of stevia (or monk fruit)
  • 1 tsp of vanilla extract

Instructions:

Place the cocoa butter, coconut oil and butter in a saucepan and gently melt over low heat.

Remove from the heat and allow to cool lukewarm.

Once the mixture has cooled, add the stevia and vanilla extract and stir to combine.

Pour the fudge into a jar or a flan tin. Spread the nuts evenly across. Refrigerate until the fudge reaches the desired consistency.
