Avocado chocolate truffles

Ingredients (12 truffles):

  • 1 cup raw cacao powder (1-2 Tbsp for dusting)
  • 3 Tbsp coconut oil melted
  • 2 small avocados
  • 1 Tbsp of raw honey or monk fruit sweetener
  • 1 Tbsp vanilla extract
  • 1-2 drops of stevia (optional)

Combine the ingredients:

In a mixing bowl, combine the melted coconut oil, avocados, honey, vanilla extract, and stevia. Use a hand mixer on medium speed to mix the ingredients until smooth.

Gradually mix in the 1 cup of raw cacao powder until completely combined. Place in the freezer for 10 minutes.

Using a tablespoon, scoop out the mixture and roll it into balls. Dust with the remaining 2 tbsps of cacao powder. Chill in the refrigerator before serving
