Orange Chicken with Broccoli Rice

& Sesame Red Cabbage

Ingredients (1 serving):

  • 3 Chicken thighs (High-protein serving)
  • 50 gr Shredded red cabbage
  • 75 gr Broccoli ‘rice’
  • 40 gr Orange segments
  • 15 ml Soy sauce (low sodium)
  • 9 gr Sesame oil
  • 9 gr Minced garlic
  • 1 Lime
  • 8 gr Orange chicken spice blend (salt, orange peel, onion, garlic, paprika, sugar, red bell pepper, mustard, thyme, parsley, rosemary, oregano, sunflower oil, orange oil)

Cook the chicken

In a large pan, heat a drizzle of oil on medium-high. Pat the chicken dry with paper towel; season with ½ the spice blend and S&P. Add the chicken* to the pan and cook, partially covered, 4 to 6 minutes per side, until cooked through. Transfer to a plate, leaving any browned bits (or fond) in the pan.

Cook the broccoli ‘rice’

While the chicken cooks, in a medium pan, heat a drizzle of oil on medium. Add ½ the garlic and cook, stirring frequently, 30 seconds to 1 minute, until fragrant. Add the broccoli ‘rice’ and cook, stirring frequently, 2 to 3 minutes, until heated through; season with the remaining spice blendand S&P to taste.

Make the orange sauce

Juice the lime. To the reserved pan of fond, heat a drizzle of oil on medium. Add the remaining garlic and cook, stirring frequently, 30 seconds to 1 minute, until fragrant. Add the orange segments (and any juice), soy sauce, ½ the lime juice and ¼ cup of water (double for 4 portions); season with S&P. Cook, 2 to 3 minutes, until the volume has slightly reduced. Add 2 tbsp of butter(double for 4 portions); stir until the butter has melted and season with S&P to taste.

Finish & serve

In a large bowl, combine the cabbagesesame oil and remaining lime juice; season with S&P to taste. Divide the broccoli ‘rice’ between your plates. Top with the sesame cabbage, then the chicken. Spoon the orange sauce over the chicken.
